Crafted at the Ixhuatlán del Café Processing Centre, part of the renowned Santuario Project, this lot undergoes a meticulous double fermentation using mossto (the rich juice of coffee cherries) for extra depth and complexity. After a slow, sun-drenched dry on raised beds, what you get is a vibrant, clean cup with a long, luscious finish.
