Description

Colombia Supremo takes its name from the size of the bean. Supremo is Colombia's top screen grade, so only the largest beans make the cut.

This lot comes through Carcafe, Volcafe's team in Colombia, which has worked across the country's growing regions for more than 35 years. It's grown mainly in Cundinamarca, in the mountains around Bogotá, at 1,300 to 1,700 metres. The trees are Typica, Colombia and Caturra, harvested between April and July.

It's fully washed, which keeps the cup clean and bright. Crisp apple and apricot come first, then a lift of grapefruit, with a deep prune sweetness on the finish. We roast it to work both ways, as espresso or through a filter.

Our recommended recipes. A starting point, not a rulebook.

Coffee questions

Before you ask.

What does single origin mean?

Coffee from one place, rather than a blend of several. One country, often one region or one farm, so you taste where it comes from.

Why does the range change?

Coffee is a harvest crop, so single origins come and go through the year. When one lot runs out, the next takes its place.

Espresso or filter?

Most of our single origins work either way, and the Brew guide tab has a recipe for each. Where a lot is built for filter, the Brew guide says so.

How fresh is it?

We roast in Sydney, and orders usually go out within a few days of roasting. Every bag carries a best before date, set one year from the roast date.

How should I store it?

Squeeze out the air, seal the bag, and keep it somewhere cool and dark, away from the stove and the sun. Skip the fridge. Moisture does coffee no favours.
