Description

This coffee is grown by the Ukuni Women's Association in Mul Baiyer, in Papua New Guinea's highlands. The association was formed in 2010 to support the women of the Ukuni community, and coffee is their main source of income.

It has 194 registered members and their families, from seven wards across the region. Together they farm more than 230 hectares, about 720,000 coffee trees. Roads are poor, so the coffee is kept in a shared storage shed until it can get to market. PNG Coffee Exports supports the group with training and tools, and the association is chaired by Racheal Joseph, who also works as its field officer.

"We, the women of Ukuni, have lived in the dark under difficult conditions for far too long. That time has now passed, and together we can make sure we have a better future."

The trees are Typica and Bourbon, grown at 1,600 to 1,900 metres, and the coffee is washed. Blackcurrant comes first, then papaya, with a panela sweetness on the finish. We roast it for filter.

Built for filter. Our recommended recipe, a starting point, not a rulebook.

Coffee questions

Before you ask.

What does single origin mean?

Coffee from one place, rather than a blend of several. One country, often one region or one farm, so you taste where it comes from.

Why does the range change?

Coffee is a harvest crop, so single origins come and go through the year. When one lot runs out, the next takes its place.

Espresso or filter?

Most of our single origins work either way, and the Brew guide tab has a recipe for each. Where a lot is built for filter, the Brew guide says so.

How fresh is it?

We roast in Sydney, and orders usually go out within a few days of roasting. Every bag carries a best before date, set one year from the roast date.

How should I store it?

Squeeze out the air, seal the bag, and keep it somewhere cool and dark, away from the stove and the sun. Skip the fridge. Moisture does coffee no favours.
