- Process
- How the fruit comes off the bean. Washed coffees taste clean and bright. Naturals dry inside the cherry, so they're fruitier and fuller.
- Altitude
- Higher farms mean cooler nights and slower ripening, which usually brings more sweetness and a livelier cup.
- Varietal
- The type of coffee plant, a bit like grape varieties in wine. Each one brings its own character.
- Best for
- How we roast it. Filter roasts stay lighter to keep the fruit. Espresso roasts go further for body and sweetness in milk.
